We Westerners really need to start paying attention to our diet as in exactly what we consume. We eat far too many processed foods and there is much evidence to suggest that a “hunter gatherer” diet of fresh fruits, vegetables, nuts and whole grains are far better for us on many levels. Researchers spent time studying the diet of the Tsimane people, an indigenous group of people that consume a hunter gather diet. What they found was astonishing. They sampled 705 adults in several villages and found that 85% of them had no risk, and 13% had low risk of developing atherosclorosis, aka hardening of the arteries. This is a stark contrast to 6,814 Americans tested. Tests showed that 50% of Americans in the sampling were at high or moderate risk for the disease. It really does come down to “you are what you eat”.
