Kale is one of nature’s super foods due to its high concentration of numerous antioxidants. Kale contains vitamin A, K and C, helping with eyesight and skin tone and aiding blood clotting as well. Because it is rich in fibre it helps reduce sugar levels in the blood. It also contains Omega 3 to boost anti-inflamatory reactions. For those who don’t like the sometime bitter flavor of kale, it can be baked into snack like chips. Baby kale, with a milder flavor can be included in salads or smoothies.
