Most people don’t know that some vegetables are a good source of protein. Hubbard squash, peas, spinach, cauliflower and beet greens are in the high protein group. But the most surprising high protein vegetable is the potato! Both white and sweet potatoes are good sources of protein. Most people, I’m sure, wouldn’t think of a potato as a source of protein. Red Bell Peppers and Zuchinni squash are also high in protein and that came as a real surprise to me.
