Mushrooms are now being called the new super food. They are loaded with antioxidants, vitamins and minerals. Two of the antioxidants found in mushrooms include Ergothioneine and Glutathione. These antioxidants can lower your risk of Parkinson’s disease. Vitamins found in mushrooms include B vitamins and Vitamin D. Mushrooms are the only vegan food that make Vitamin D. There are also small amounts of trace minerals including Selenium and Copper in mushrooms. All varietals of mushrooms are packed with nutrients although exact quantities vary with the type.
